We build training ladders that take a runner from the trolley to the pass, then to the dumpling board, with a signed chit at every rung. Each venued staff member learns the common grammar of service: how to lift a lid without letting the steam scald a wrist, how to describe a dish without touching it and how to pace a table in a crowded hour. Cross training means a sudden wave at outlet three is steadied by helpers who already know the plates of outlet five. Good hands are grown, never bought, and we grow them with intention.
